Sorso maach or a fish curry made up of mustard seeds, is a famous recipe all across the eastern region of India. This dish is easily available in every Bengali and Oriya restaurants. It is a savory dish and the ingredients to make it are readily available in the kitchen. So here are the simple steps to cook this delicious dish.

- 6 tablespoon Mustard seeds (sorso)
- 1/2 teaspoon cumin seeds (jeera)
- 2 medium sized onion
- 2 bulb of garlic
- 3-4 pieces green chilies
- 1 tomato
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- Mustard oil
- Salt to taste
- 2 teaspoon of curd

Before describing the procedure to prepare this dish I just want to let you know that the ingredients mentioned is for 1 kg of fish (12 pieces of fish).
STEP 1:
The first and foremost step to cook the dish is to soak the mustard seeds, cumin seeds, 4-5 pieces of garlic and 2 green chilies in bowl.Soak this for about an hour and grind it to a smooth paste.
STEP 2:
In the second step take a bowl and wash the pieces of fish cleanly and marinate it with turmeric powder and salt for about 15 to 20 minutes. While the fish gets marinated, slice the onions and tomato into thin pieces. After that take the bulb of garlic, peels its outer layer and slice them into thin pieces.
STEP 3:
In the next step heat a pan and add good amount of mustard oil to it and let it heat for good 5 minutes. Once the oil is hot, deep fry the fish in it. Be generous while frying the fish because if the fish is not properly fried the food would not taste the same
STEP 4:
After the fish is fried take another pan and pour 2-3 table spoon of mustard oil to it. As the oil gets heated add the sliced onion, 2-3 green chilies and fry it for 5 to 10 minutes. Once the onion starts turning red add the tomato pieces to it and cook it till it becomes soft. Then put the sliced garlic and cook it for just a minute. Once the garlic goes into the pan lower the flame and add mustard paste to it. Do not cook the mustard paste for more than 2 minutes because if it is cooked for a longer time it becomes bitter. After 2 minutes pour water into it and add the turmeric powder, red chili powder, and salt and let it boil till the raw smell of mustard paste goes away.
STEP 5:
Once the rawness of mustard paste goes away add two teaspoon of curd. This is optional as it makes the dish a little sour and adds flavor to it. After this put the fried pieces of fish into the pan and let it cook till the fish becomes a little soft, say for a 10 minutes and turn off the flame.
STEP 6:
Sorso maach is ready to be served. Garnish it with some coriander leaves and serve it with hot steam rice.
