"Paneer bhurji" - a dish  that's too delicious  to eat and so easy to cook. It acts as a perfect serve for guests or to pamper oneself.. So here are the ingredients  and steps to cook this delicious dish.

INGREDIENTS:

  1.  1 litre milk
  2.  1 big size tomato or two medium sized tomatoes
  3.  1 big size lemon/vinegar/curd
  4.  2 cloves
  5.  1 cinnamon stick
  6.  A pinch of cumin seeds
  7.  A pinch of coriander seeds
  8.  3-4 cashew-nuts
  9.  1 tablespoon of soaked white poppy seeds/ melon seeds (chaarmaagz)
  10.  1 teaspoon of turmeric powder
  11.  1 teaspoon of chilly powder
  12.  1 teaspoon of chicken masala powder
  13.  Salt to taste

PROCEDURE:
 Step 1:
Pour the milk in a container. and add some water to it. Heat the milk for ten to fifteen minutes. Once the milk start boiling cut the lemon into two halves and add to it. If lemon is not available then add a teaspoon of vinegar to the milk. As soon as vinegar or lemon is added to the milk, it will start  forming crumbled paneer. When the paneer starts forming the water part of the milk will get separated. Once the paneer is formed switch off the gas and let it cool down. Then with the help of a separator, separate the water and the crumbled paneer.

Step 2:
In the second step place a jar in the grinder and cut the tomato into small pieces. Put the tomato pieces into the jar and add cumin seed, coriander seeds and cinnamon stick to it and grind it into a smooth paste.Once the tomato paste is done put it aside and place another jar in the grinder. Pour the cashew nuts and soaked poppy seeds/melon seeds into the jar and grind to smooth paste.

Step 3:
Place a pan on a gas let it pre-heat for 5 to 10 minutes. Then add two tablespoon of oil in the pan. once the oil is hot add  tomato paste to it. Let the tomato paste be cooked for for fifteen to twenty minutes till its raw smell is gone. Remember to cover the pan with lid in order to avoid the splashing of tomato paste all over. Once the tomato paste is cooked add the turmeric powder, chilly powder to it and cook it for another 1 to 2 minutes.Then add the crumbled paneer and the cashew nut and poppy seeds paste to it. Then cook the paneer at a low flame for about fifteen to twenty minutes.IF water starts coming out then cook till it is dry. Once the paneer is cooked  add  salt( as per taste) and chicken masala powder to it and cook it for another 2 to 3 minutes. After the paneer is well cooked switch of the gas and garnish the paneer with some coriander leaves serve it with hot chapattis or parathas.
