Fridays or the weekends are the days when everyone craves for good dinner or a yummy lunch. With all the veggies at home mix veg is a perfect answer to the cravings. This recipe is very easy to make and can be cooked in less time. So here are the ingredients and steps to cook this dish.

INGREDIENTS:
- 250 grams of cauliflower
- 250 grams french beans
- 2 medium sized carrots
- 1 medium sized capsicum
- 2-3 medium sized onion
- 1 medium sized tomato
- 250 grams of cottage cheese(paneer)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2-3 tablespoon soaked poppy seeds
- cashew nuts
- vegetable oil
- 2 small cloves

PROCEDURES:
STEP 1:
The first step is to roughly the cut onion, tomato the garlic and ginger. Then heat a pan add to it 1 tablespoon oil,once the oil is hot stir fry the onion,garlic,ginger,tomato for 5 minutes till the tomato becomes soft. Keep it aside and let it cool down. Meanwhile, chop the veggies, cottage cheese(paneer) and onion into thin pieces. Then in the same pan put some more oil and stir fry the veggies and onions for nearly 5 to 10 minutes till they start turning red. Then switch off the flame and let the veggies cool down. Do not fry the capsicum just cut it keep it aside.

STEP 2:
In the next step put the fried onion,tomato,garlic,ginger, soaked poppy seeds ,4-5 cashew nuts, 2 small cloves( de- seeded) in a grinding jar and grind it into a smooth paste. Then in the same pan heat a tablespoon of oil, and pour the grinded paste into it . Cook it for 2-3 minutes in medium flame and then pour in the veggies except the chopped capsicum. Then add 1 teaspoon of turmeric powder,red chili powder, paneer masala powder(optional) and cook the veggies for another 1 minute. Once the veggies start becoming soft add the chopped paneer, capsicum, some cashew nuts and some water and cook it for another 2-3 minutes till the capsicum is soft.

STEP 3:
At this point lower the flame of the gas add to it salt and 1/2 teaspoon of cardamom powder or garam masala powder. Adding garam masala powder to the dish will give it a good aroma. Cook the food for a minute and switch off the flame. Mix veg is ready, serve it with hot chappatis or fried rice.
