PANEER SHAWARMA- AN ARABIC STREET FOOD

Shawarma is an Arabic street food which is famous all over the middle east countries. Generally it is filling of chicken with some mayonnaise and veggies in a bread known as the pita bread. But in this recipe the filling has been made of paneer. This recipe is very easy to make and the ingredients to make it are easily available in kitchen. So here are the steps to cook this delicious dish.

INGREDIENTS:

  • 1 cup of refined flour/ maida
  • 1 tablespoon of yeast
  • 500 grams of paneer cubes
  • 1/2 piece of betroot
  • Some sliced cabbage and carrots
  • 1 medium sized onion
  • 4-5 pods of garlic
  • 1 teaspoon lemon juice
  • 1/2 teaspoon of jeera
  • Refined oil
  • Salt to taste.
  • Mayonnaise
PROCEDURE:

STEP 1:
The first step in making shawarmas is to prepare its bread. So to make the pita bread, take a small bowl of lukewarm water and add to it 1 tablespoon of yeast and a pinch of sugar. Let the yeast and sugar get dissolved in water properly. Then in another bowl put 1 cup of refined flour and pinch of salt and pour in the lukewarm water of yeast into it. Knead the maida into a dough which is neither too soft nor too hard. Let it rest for minimum for 2-3 hours so that dough gets fermented. While letting it rest cover it with a wet cloth least it dries.
DOUGH FOR PITA BREAD

STEP 2:
While the dough gets fermented, peel off the skin of garlic pods and roughly chop the onions into small pieces. Then in a grinding jar put the garlic pods, onion pieces,1 teaspoon jeera/ cumin seeds, 1 teaspoon of lemon juice ,some chopped green chilies and olive oil or refined oil to it.Grind these all into a smooth paste.

STEP 3:
The next step is to cut paneer into big cubes and marinate it with the garlic and onion paste. Then heat a pan grease it with some oil and then at a low flame roast the paneer cubes on both the sides. Once the paneer cubes are cooked switch off the flame of the gas and let them cool down.

STEP 4:
Now while the paneer cubes are cooling down peel some more garlic pods ,crush them roughly and add it to the bowl of mayonnaise and whisk it with a spoon so that it can be mixed properly. Then chop the beetroot and the paneer cubes into thin pieces.

STEP 5:
By this time the dough will be fermented, knead it again and start rolling out into rotis or chappatis. Make sure that don't roll it too thin or too thick. Then heat a pan or a tawa and start making the pita bread at a medium flame. Once both the sides of the bread turns light brown bring it off the tawa.

STEP 6:
The pita bread is ready. Now evenly spread the mayonnaise on the bread, and in it fill the sliced paneer cubes,beetroot ,shredded cabbage and carrots.Then take both the ends of the bread and hold it together with the help of a tooth pick. The reason behind putting them together with a tooth pick is that ,pita breads are so thick that it can't be rolled into rolls.

STEP 7:
Paneer shawarma is ready and enjoy it with some mayonnaise or sauce.
