Mughlai chicken is a recipe which trace it's history back to the Mughal periods. It is said that this recipe was created the by the mughal emperors themselves. This recipe is a mixture of spices ,dry fruits and chicken. It tastes yummy and delicious. So here is my take on this recipe with all the steps and the ingredients.
INGREDIENTS:
STEP 1:
The first step is to marinate the chicken with curd,haldi( turmeric powder), red chili powder. Marinate it for at least for one hour. While the chicken gets marinated,chop the onions,ginger and garlic roughly.Then fry the chopped opinion till they start turning brown. At this time switch off the gas and let the fried onion cools down. While it cools down grind the garlic,ginger and jeera(cumin seeds) into a fine paste. After that make a fine paste of the cashew nuts and keep it aside.
STEP 2;
By this time onions must have cool down, grind them into a fine paste. Then heat a pan where u want to cook the chicken and pour some oil into it and let it heat it. While the oil gets heated roughly grind the cinnamon,cloves,cardamom and peppercorn and add it to the pan. Let it fry for a second and then add the ginger garlic paste and cook it till it's raw smell fades away. After this add the onion paste and cook it for five to ten minutes.
STEP 3:
After 5 minutes add the marinated chicken into the pan and cook it at a medium flame.When the chicken gets half cooked add the cashew paste to the chicken. Cook the chicken at medium flame and cover it with a lid . Within twenty to twenty five minutes the chicken will get cooked.At this time add chicken masala to it for a good aroma.
STEP 4:
Mughlai chicken is ready.Garnish it with some coriander and serve it with chapatis or rice.

- Chicken (1 kg)
- Curd
- Onion(4 pieces)
- Garlic (8 pieces)
- Ginger
- Cloves,peppercorn,bay leaf, a small cardmom and a small piece cinnamon stick
- Cashews(4 pieces)
- Turmeric powder
- Salt( according to taste)
- Red chili powder(according to taste)
- Chicken masala
- Coriander powder
